How to Speed Up Your Deli Counter During the Lunch Rush

The lunch rush is not a planning problem. It is an execution problem. The counter that handles 80 orders between 11:30 and 1:00 is not running a different menu than the counter that handles 40 — it is running the same menu without the bottlenecks.
